Sundays are all about cleaning and getting ready for the upcoming week...that means cooking. My husband works a wonky third shift where he has to leave for work by 5:30. I commute 45 minutes each way for my job and don't get home until 4:30. Which gives me at most 30 minutes from the time I get home to have supper done and ready on the table. That means I do a lot of cooking and reheating or prepping ahead. We also both take our lunches to work, so we need to have food ready for that as well. I am pretty easy to please. I really like sandwiches. Not because they are easy, but because I actually enjoy them! I try to make a loaf of bread or buns each week just to have ready for some quick meals. Today I am going to share with you a recipe I am trying for potato bread in the bread machine.
The great thing about potato bread is that it has a great consistency for sandwiches and there are no eggs. Did you know that mashed potatoes can be substituted for eggs in recipes? Well they can! You use a 1/4 cup of prepared mashed potatoes for each egg. This works best in breads and cakes for consistency. I know this because I have a sister who is vegan and a friend who is allergic to eggs. When I first tried this in my normal bun recipe, it turned out even better than normal. When I was talking to my aunt I learned that this is because the yeast can feed of the protein in the potato flakes and makes the yeast more effective. My mind was blown!
This recipe makes a 1 1/2 lb loaf. I made it in the bread machine, but it would work just as well if you made it by hand.
BREAD MACHINE POTATO BREAD RECIPE
3/4 cup milk or 3/4 cup soymilk
1/2 cup water
2 T. vegetable oil
1 1/2 tsp. sald
3 cups flour
1/2 cup instant potato flakes
1 T. sugar
2 tsp. active dry yeast
Add ingredients in the order listed or as directed by your bread machine manual. Set the bread machine for the desired setting. I use my normal 11/2 lb loaf setting.
